Today, quality remains Pierre Sparrs primary focus and the winery consistently exceeds AOC guidelines. (Alsace produces only AOC level wines.) Minimal intervention in the winery preserves the characteristics of the land; gentle whole cluster pressing followed by slow, cool fermentation.
