Domaine Marie-Pierre Chevassu Fassnenet makes some of the most unique wines in France. A small vineyard on a steep hillside with several owners and a single appellation of origin. Marie-Pierres Chardonnay is made in old barrels that allow a protective layer of yeast to form. Not quite as full-on as a true Vin Jaune, it has softer oxidized characteristics that give it savory sherry-like notes, as well as toasted almond, brioche, honey, and poached pear. This wine was farmed organically, used natural yeasts, and is unfined and only lightly filtered with minimal sulfur added.
