At Domaine Chicotot, taking into account floor work and sustainable treatment of the vines, wines are produced that reflect the properties of the terroir. In most cases, the entire grapes are vinified. The wine is then poured into the wooden barrels by gravity and matures on the lees for 18 months. A maximum of 10% new barrels are used. When bottled, the wines are not filtered. The vineyards are small, but beautifully landscaped and cared for. Pascale’s wines, Georges Chicotot’s wife, are made with passion and serve as a style in this area. Her son Clment is now also working in the company. Since the wines are reductively developed, it is advisable to decant them before drinking. Chicotot wines are among the most expressive of Nuits-Saint-Georges and are considered to be very durable.
