“We practice low intervention, environmentally-friendly viticulture, we do not till the vineyards, all processes are carried out manually, we use selected native plants for ground cover and we fertilize with compost to improve the vines resistance to diseases.

Our philosophy of minimal intervention is carried through to the winery, we use spontaneous fermentation, avoid racking, not filter or clarify, we do not use additives and only add sulfur in very moderate doses.”
