Lite Werk Yuzu by Wonderwerk is made from re-fermented grape pomace (piquette) from direct-pressed white wines for 3-7 days and blended it with 30% finished wine, including Riesling and Verdejo. Infused with Japanese and California yuzu peel from YUZUCO, the base wine underwent fermentation with native yeast and bacteria, followed by a light bottle re-fermentation using a Champagne yeast starter. Lite Werk Yuzu has an alcohol content of 7%. Bright pop of citrus with herbal notes of basil, mint and rosemary.
